I haven't eaten sauerkraut for a long time, and I missed it one day in the past few days. Coincidentally, my friend brought me some home-made sauerkraut from my hometown. Just like the bamboo shoots (dry bamboo shoots) brought back by the other friend to Jinggangshan, there is today. Sauerkraut and bamboo shoots are perfect, whether it is fresh bamboo shoots or dried bamboo shoots. Just dry bamboo shoots must first soften. If you are anxious, you can cook the slightly dried bamboo shoots in a pressure cooker like me, and then cook them with sauerkraut.

  1. Slightly soaked bamboo shoots are boiled in a pressure cooker and shredded.

  2. Add the sauerkraut and dried bamboo shoots to the hot oil pan and turn it over.

  3. Add the above seasonings and a large bowl of water, cover and simmer for about 30 minutes.

  4. Mushrooms and fried bean curd can also be added according to personal preference. Friends who like spicy taste can add some amount of dried chili or hot sauce during cooking.

Tips:

Although sauerkraut is delicious, pickled foods should not be eaten regularly. In addition, this dish is special, please be careful not to overdose :)
