The weather is getting hotter and the salad begins to become a high-frequency dish on the table. Although "grazing" is the mainstream now, I don't know if there will be many people like me. The favorite is potato salad~ Hahahaha~ When I was young, I loved my mother's potato salad. The ingredients are simple: potatoes. , the mountain forest red sausage (is a very old deli in Shanghai, his home is very famous), sometimes add some corn, sometimes add some cucumber. Basically, I can eliminate more than half by one person. But everyone knows that salad dressing is actually oil~~~ So this time I share with you a less oily version of mayonnaise, which uses only 1/3 of the ordinary mayonnaise! Correct! Only one third! And the taste is not lost at all!
Put two egg yolks in the cooking pot. (When you take a picture, you have a hand broken, break one of the egg yolks...) Add 50g of milk (that is, 5-6 spoons in the figure)
Three spoonfuls of white sugar (sweetness can be adjusted by yourself)
To make salad dressing, be sure to use odorless oil~~ Don't use peanut oil, olive oil, these smells~~ I used corn oil~
Add 4 tablespoons of oil (you see the general mayonnaise, 120ml oil is the base...)
Beat the mixture with egg
Move the dish to a pot with hot water and whipped with an electric egg beater.
After the egg yolk mixture is whitish, add 15g white vinegar (1 tablespoon half a spoon)
Continue to beat with an electric egg beater.
After the bubbles in the mixture become significantly smaller, the dish is removed from the hot water while the egg is pumped in one direction. You will see the bubbles slowly disappearing completely. At the same time more and more thick.
Take a look at the finished mayonnaise. Very sweet! And think of so little oil, are you very happy!
The preparations in the back are super simple~ the potatoes are cooked and peeled.
Cut into small pieces.
The corn kernels are cooked and the crab sticks are cooked. Ham cuts. Stir in mayonnaise
Ok, delicious and healthy potato salad is ready~
Can also be made into mashed potatoes, the burden of eating is really small!
