For the meat sauce noodles, I prefer white sauce. This recipe is prepared for 15 minutes, cooking time is 7 minutes, and can be used for three to four people. It is also possible to use canned sardines without anchovies.

  1. If you can use canned anchovies, first remove the excess salt from the cold water of the anchovies, then chop it up.

  2. Mix chopped anchovies or sardines with grated mozzarella cheese

  3. Mix the two egg yolks with a little salt and pour them into the second step of the anchovies.

  4. Boil the salt in a small pot and bring the pasta into the pan. It takes about 3-4 minutes. The pasta is not too soft to cook. It will be better to keep a little bit of chewy.

  5. The boiled pasta is filtered to remove the water, and the pasta is quickly mixed with the previously prepared white sauce. Sprinkle with a little chopped parsley to increase the aroma.

Tips:

Because the egg yolk in this white sauce is completely cooked by the hot noodles, it retains a very sticky taste and needs to be eaten quickly. When it is cold, it will dry and the taste will be lost.
