Dad recently made a research effort to develop a cake, tried several types, put on the powder, add yeast, rice cake, and noodles. Finally settled in this version of the old noodle cake. The steamed cake made with the old noodles is very soft but very bite, and there is no sour taste of the rice cake. It is delicious to chew it!
The old noodles are hydrated and added with flour, salt and sugar. The way to knead the dough is to lift the dough from the basin around and lift the fist into the center of the dough. If the dough is particularly sticky, apply a little water to your hands.
After the dough is smoothed, add the vegetable oil and continue to rub the edges in the same way until the oil absorbs the dough smoothly.
Cover the basin with a plastic wrap and ferment it to twice the temperature in a warm place.
Add a small amount of water to the alkaline water (about 1 tbsp). Slowly knead the alkaline water into the dough with a hand dipped in alkaline water. The longer the time is, the stronger the dough is.
The kneaded dough has a light alkali scent as well. Divide the dough and divide it by hand. Place the smooth side up in the cup, about eight minutes. It can hold about 8 Muffin cups.
Put it in a warm place again and send it to the dough slightly above the edge of the cup. Put the red dates on the core.
Put the steam into the steamer after the fire is on the steam. The fire is slightly adjusted. After steaming for 30 minutes, turn off the heat for 5 minutes and then take it out.
