The seventh day of the seventh lunar month is the traditional Chinese festival "Chinese Valentine's Day." In the folk customs of Zhangzhou, "Qi Xi" is a festival full of human feelings. It is essential to eat "white wine". "Chinese Valentine's Day" is the birthday of "Mother and Daughter". Legend has it that the "mother and sister" is the maid of the "seven mothers" who sent the sons and is the patron saint of the children. Therefore, on this day, all the children in the family must worship the "mother and sister" and pray that the children will be safe and healthy and grow up healthily. The offerings of worship are indispensable for "white wine". Generally, liquor is only made during the "Chinese Valentine's Day", so it is difficult to buy it at ordinary times. I especially like to eat white wine, then I only have to do it myself.



  1. Cook the rice into a dry meal and shovel it in the pan.

  2. Spread the dry rice shredded on the larger pot and let it cool.

  3. Spread the small pieces of rice balls to mix the rice grains with the koji.

  4. Mix the right amount of koji into the rice and mix well.

  5. Spread the cloth in the pot and put the dried rice into it and compact it.

  6. After compaction, put it in a room with a higher temperature to facilitate fermentation.

  7. After 24 hours, remove the wrapped cloth and move it to a ventilated place to stop the fermentation; if the temperature is low, extend the time appropriately.


You can eat it directly or cut it into small pieces. First boil the water, put in a small piece of "white wine", and cook until the water is open. If you like to eat more sweet, you can add the right amount of sugar.
