Then pour the egg yolk paste back into the remaining protein and mix it until it is fine and thick.
Pour into the mold, hold the mold left and right and rotate it several times to make the surface level; then shake it several times to shake out the big bubble inside, or insert the batter with a toothpick and gently draw the Z character to eliminate the bubble, then wipe it with a spatula surface
Put it into the lower layer of the oven, open up and down, and bake for 40 minutes at 150 degrees (reference temperature, which is based on the temperature of your own oven. I use the Changdi CRTF32G here, the temperature is well controlled)
After baking, take out 10cm from the table and drop it vertically. The bottom of the mold will land on the ground. After falling 5 times, place it under cooling (about 10 minutes), and use a long knife to scrape a circle along the inside of the mold (to facilitate demoulding)

The milk in the recipe can be replaced with water and milk powder, and the effect is the same. 7 Hurricane cracking is not a failure.
