Liu Yifan’s method of “Star Chef Driving” is actually much more beautiful when it is replaced by a white plate. Black does not easily show the golden color of rice.
Prepare the rice, separate the egg whites, and chop the chives.
Put a little oil in the wok, turn a small fire, pour the rice into a stir fry and break up the cake.
The egg yolk is sprinkled on the rice in a small bowl, adjusted to medium heat, and quickly mixed evenly, so that each grain is evenly wrapped with egg liquid.
Stir-fry until the rice is grainy, add salt, and season with pepper.
After the fire is turned off, sprinkle with scallions and serve in a pan.
