The northern tofu is washed and cut into thin slices for use. I use the black bean tofu, so I can't look at it.

Hot oil in the pot, turn a small fire. Spread the tofu slices on the bottom of the pan and sprinkle with a pinch of salt. The oil is a little more than the usual cooking. Adjust the medium heat and turn the pot by hand so that each piece of tofu can be fried hot for a while.
When the side of the tofu slice is slightly yellowed, add soy sauce and stir fry evenly.
Turn the tofu slices to the side, the red pepper and the leeks, and quickly stir fry until the break. Mix and stir fry evenly, add about 30 ml of water, simmer, add salt and monosodium glutamate, stir well and serve.
