Soak the pig intestines in a light salt vinegar mixed solution for a while, remove the dirt, then put it into the rice water for a while, then gently wash it twice in clean water. Remove the fat sausage soup. Wash the good sausage with warm water. Take the water, pour it into the fat intestines, add onion ginger, cooking wine, and cook for about half an hour. Slice the pepper, green onion, carrot, and garlic. Place the seasoning in a bowl and add a proper amount of water to make a bowl of juice. The cooked intestines can be removed with chopsticks. Cut into small pieces when not hot. Heat the wok with hot oil and pour the onion, garlic and carrot. Add pepper. Pour in the intestines and stir fry for a while. Pour in the bowl of juice and stir well.
