Cut the ribs, wash and drain. Open the pot for 1 minute, remove and drain. (I just dumped the water and didn't stay.)
Cut the onion and slice the ginger. Most of the pot water, onions, ginger, ribs together with the cool underwater pot (new water used here). Let the fire boil! (I specially put a lot of water in order to open the pot in a while.)
It is recommended to start the foam when you open it quickly, so that the edge of the pot is also relatively clean. And if there is too much water, there will be no pressure on the foam when it is scared. In this way, as shown in the picture, the foam is very clean, and the soup looks clear and refreshing. After the pot is opened, put a proper amount of cooking wine (to remove sputum) and vinegar (which is beneficial to the calcium outflow in the ribs). Slowly simmer for 1 hour in a medium heat.
Carrots are chopped and chopped, put a small amount of oil in the wok, heat the carrot pieces and stir fry until discolored. (There is water on the carrots. The chefs remember to keep the lid in front of the chest when the pot is placed, in case the oil is splashed~)
Grasp the time, fry the carrots and other ribs and stew until 1 hour. Continue to simmer on a small fire! It takes about 20-30 minutes to turn off the fire. If you want to eat softer ribs, you can continue to cook slowly.
Put the salt in the bowl separately after the pan, so that a bowl of delicious pork ribs soup is ready! ^_^
