“Boiling Cabbage” is a famous national banquet dish. It is made from the Chinese cabbage and the top broth of the state banquet. It seems to be simple and unpretentious, but it is full of Chinese banquet. The production of “open water” is the key to this dish. First, the chicken, duck, ham, ribs, scallops and other fresh goods will be taken out of the broth, then the chicken meat will be mashed, poured into the boiled fresh soup, the impurities will be adsorbed on the meat to form a ball, and the fish will be removed. Repeat several times until the soup is "clear" as clear as boiling water. Then use ‘open water’ to pour the cabbage. Legend has it that this dish is light yellow and clear, fragrant and refreshing, and it is very popular. The practice is also a legend, because I have not done it. Although the dishes are just legends, it is difficult to eat them as such. It’s hard to test the chef’s efforts by making the plain dishes delicious. The Spring Festival, Valentine's Day, and the Lantern Festival are all over, and the days are going back to level. Because life is not a drama, it will not climax, the festival is only an embellishment of the years, life always belongs to the plain main theme. It’s harder to have a flattering day than a holiday carnival. However, as long as you love life and manage your heart, the seemingly dull days can be as simple, healthy, delicious, and not as thin as this kaishui cabbage. Of course, it is very difficult for us to make a national banquet at home. Today we introduce the civilian version of ‘Kaishu cabbage’, let the stomach relax after the holiday carnival. The civilian version is also using chicken soup to stew cabbage, but the practice is simpler. If you have chicken soup stewed at home, you may wish to make a civilian version of 'open water cabbage'.
Boil the water in the pot, add cooking wine, pepper, salt, and boil in cabbage for 2 or 3 minutes.
Chicken soup (preferably with scallops, ham stew) with 'leaking spoon' to filter impurities
Put the cabbage and chicken soup in a bowl and steam for 10 minutes.
