Wash the bitter gourd with a toothbrush, cut the seeds in half and dig out the inside, and cut into thin slices. Note that I only used 1/6 bitter gourd.
Mix the bitter gourd with 1/4 tsp of salt and leave to marinate for 10 minutes. Then hand-pick the bitter gourd pieces to remove moisture
Add three eggs to break up, add fish sauce or salt, chicken and mix thoroughly
Heat the pan, add 1 tbsp of oil to heat, pour in the egg, and spread the bitter melon on the surface with chopsticks.
Simmer until the surface is slightly yellow. After the surface of the egg liquid is condensed, take a large plate and fold it on the bitter gourd egg. Turn the egg over and fry.
Continue to fry on a small fire until the surface is golden. After a little cool, cut the pieces.
1. bitter gourd should be thinner and taste better. The amount of bitter gourd should not be too much. The egg is about 2 times the amount of bitter gourd. 2. The oil of the fried egg should not be too small, otherwise the fried egg will be dry and not fragrant. 3. The fish sauce itself has a salty taste. If you want to put the fish sauce, don't put any salt. If you don't have fish sauce, you can put salt.
