Soak the oxtail water for 2 hours, soak the bleeding water and wash.
Prepare onions, ginger, garlic, and clams. I bought the whole garlic without dividing the petals. Garlic can be preserved, I am a little bit clean, so I still peel it off.
The oxtail is boiled in a cold water pot. After the water is boiled, cook for another 5 minutes and remove the oxtail.
The oxtail is placed in a cast iron pan, and ginger, garlic, and onion are added, and the amount of boiling water is about 2L. After the fire is boiled, turn to a small fire and simmer for about 2 hours.
